As an Australian, a prawn on the barbie is a way of life. ‘Shrimp’ on the barbie if you’re talking to an American. But never had I seen a prawn so delicately handled, softly cupped in one hand while the other meticulously slices with the extraordinary skill of the chef's knife. The other hand then cupping and moulding the soft oval ball of warm rice, with a one-finger smear of wasabi, and the softest, gentlest placement of the prawn atop the rice, as if one was laying down a child to rest after they had fallen asleep in their arms. Meticulous perfection, I will repeat.
