Surprisingly, "Salmon" is the Japanese name for this fish, as it was a Norwegian businessman who introduced the use of salmon as a sushi ingredient to Japan in the 1980s. What a salesman. "Sake" is the version of salmon nigiri that’s been grilled, and trust me when I say the sushi trains in Tokyo do not mess around with the use of mayo when accompanying the "sake" version of this nigiri; they go hard.
