The color of this piece of tuna, taken likely from along the spine of the fish, is truly the color I have depicted it as. Marvellous. And the texture. Soft but with bite, if one were basic and uneducated, one might assimilate it to firm jello/jelly, but I’m far too sophisticated for that comparison. I prefer to compare it to the Otoro - liking to taste directly the differences between this giant fish and all its cuts. So far, they’re all wonderful.

Framed within a solid wood shadow box frame with a floated mount and 2-inch reveal. With museum grade UV fitering plexiglass.
This is my favorite way to frame, the wood is simple and clean and the shadow box/floated mount makes the paper appear floating, not touching the back board nor glass.
